Maggie's Creamy Vegetarian Pepper Pot Soup

I have fun trading recipes, cooking tips n tricks, ingredients substitution, etc on twitter. One of my most wonderfullest twitter mates is named Maggie. She's a vegetabletarian but she also puts my meatiness recipes on her daily paper.

The other day (month!) we were chatting about soups and she said she'd send me her pepper pot soup recipe.

Of course I had to make it!

And of course I had to change it around a bit! Why? Cuz I didn't have all the ingredients at hand so I subbed a couple of items. I also changed the amounts a bit as I was only making it for myself.

She later told me that she herself had modified the original recipe from the person she received it from! Hey, all's fair in the kitchen mates!

Here is her original ingredient list plus directions:

PEPPER POT SOUP

2 Cups Water
2 Cups Veggie Stock
2 Good Sized Potatoes, Shredded
2 Medium Carrots, Shredded
2 Celery Stalks, Chopped fine
2 Medium Onions, Chopped fine
1 Green Pepper, Chopped fine
½ Cup All-Purpose Four
2 tsp Salt
½ tsp Pepper, fresh hand milled
1 Cup Water
6 Cups Milk

Mix first 7 ingredients together in a large saucepan. Bring to boil. Cover and simmer for 20 minutes. Mix flour, salt, pepper, and 1 Cup Water together in a small container until no lumps remain. Stir into the simmering soup to thicken it slightly. Add milk. Heat through. Check for seasoning.

Makes 12 ½ Cups

Not being one to take directions too well, I decided to make a few changes based upon why I had on hand. And remember, I was only wanting to end up with 6 to 8 cups. Here's what I came up with:

Maggie's Modified Vegetarian Pepper Pot Soup


1 Cup Water
2 Cups Veggie Stock
1 Good Sized Potato, Shredded
1 Medium Carrot, Shredded
1 Bok Choy, rough chopped, leaves included
1 Medium Onion, Chopped fine
1 Red Bell Pepper, Chopped fine
1 Handfull of fresh Rocket (the peppery kind)
A few fresh basil leaves, rough chopped.
A few fresh coriander leaves (cilantro to North Americans)
½ Cup All-Purpose Four
2 tsp Salt
½ tsp Pepper, fresh hand milled
1 Cup Water
2 Cups Milk

I mixed first 10 ingredients together in a large saucepan and brought it to a boil.

It was then covered and simmered for 30 minutes.

Then the flour, salt, pepper, and 1 Cup Water were whisked together and that slurry was stirred into the simmering soup as a thickener and a spicy-er.

The milk was added and the soup was brought back up to temperature.

I checked to see if it needed any more seasonings (like salt) and I added a pinch of sea salt.

And it of course looks great in a bowl!

Soup Fritters

Yes, I can hear the collective head-scratching from all the way down in South Oz.

Lemme 'splain it to ya! Firstly you have to understand that I am the undisputed Iron Chef of leftovers. That's right, I am.

Now then, how soup fritters came about. I made some soup the other day by boiling the dekerneled corn cobs and the husks in a lot of water. Plus 2 bay leaves and a large sprig of fresh rosemary from the garden.

I then diced up a spud (potato), half a leftover onion, and the last 2 rashers of bacon from a kilo pack. Quick fried them all up, then added to the strained soup stock. Simmered till spuds were done. Salt n pepper to taste. Served with a fresh, crusty, pull-apart loaf.

Very tasty. We all loved it.

Surprisingly enough, there were a couple of cups left in the bottom of the pot the next morning. Obviously I wasn't going to toss it. I thought about having it for brekkie but then I thought that just perhaps I could make a nice side dish out of it.

But what?

I know! I'll put it in the blender to liquefy it, then add an egg or two, then add enough self-raising flour till it's a batter. Then I'll deep fry small spoonfuls of the batter! Instant fritters! Wonderfully flavoured too.

That really is all there is to it. No, I can't give you amounts as this is definitely a "seat of the pants" type recipe. But to help you out, I do have pictures!

First though, if you have over 4 cups of blenderized soup then definitely use 2 eggs.

Here is the consistency of the batter you are aiming for:

Now just drop a small spoonful into some hot oil. You don't need a deep fryer, a wok over some flame will do fine. And make sure you use rice bran oil for your deep frying! Very high smoke point and very high in mono-unsaturated fats. It deep fries food wonderfully well!

They'll swell up to around twice their size so don't crowd them. They'll also practically flip themselves in the oil once the submerged half is cooked! Here's a pic of a batch of the them deep frying after turning.

Once they are nicely browned all over and are just about done "bubbling" you'll want to remove from the oil and drain on paper towels. Like this:

Give em a little sprinkle with salt and ENJOY! When you bite into one it'll be soooooo nice, light, and fluffy on the inside. See, look!

I found they are also very nice sprinkled with powdered sugar and cinnamon powder! Like savoury donut holes! Try it, you'll like it.

Dabbling With Dumplings

My guess is that there are many different ways to make dumplings as there are food bloggers. And that's a lot. Is any one particular way the "right way" to make dumplings? No, of course not silly. It's whatever suits YOU!

This happens to be the way I like them. I like them soft, fluffy and simple. And they should pick up the flavour of the soup nicely.

The very first time I wrote this recipe down would be... oh, right about NOW! It's one of those ones that is so simple you really don't need exact measurements and the ingredients are pretty easy to remember. And this is one of the few times I use self-raising flour.

Dave's Dumplings

What you need:
A big pot of soup you've made that the dumplings will go into
1 to 1 1/2 cups self-raising flour
2 to 4 tbsp butter
dash of salt
1 or 2 tbsp sugar
some water

See? Isn't that an easy list? You'll find you can vary the amounts easily, very forgiving it is.

What you do:
Mix all the dry ingredients together. Then add the butter and work the butter in using your fingers. Add water a few tablespoons at a time whilst mixing the dough --I use a wooden spoon for the mixing part. You want to end up with an almost sticky dough. Hopefully it'll look something like this:

Now you want to tear off small pieces of the dough and quickly roll them into small balls. How small? Smaller than a ping pong ball. About the size of those small, bouncy, superballs you had when you were a kid.

Your plate should end up looking like this:

I put a 1/2 cup measuring cup so you can see the size of the dumplings.

The last step is to put them in your lightly boiling soup. Don't crowd them as they'll more than double in size. Let them cook, covered for 20 to 25 minutes. Your soup pot should now look like this:

That cast iron dutch oven holds a lot of soup, more than enough for 2 days worth in fact. The plate you saw in the second picture fits inside it with room to spare. That should give you an idea at how large the dumplings get!

Dish it up, eat, and enjoy!

Vegetable Soup Stock with Fennel

Fennel is in season down here in South Oz --probably most other parts of Oz too. You can get a full sized fennel bulb for $1.99 at the shops now.

Needless to say, I've been doing a lot with fennel bulbs lately.

But what about those stalks that you trim off?

SOUP STOCK! But this won't be a regular soup stock cus the fennel stalks impart a very mild licorice flavour to the stock so you need to season the stock appropriately.

Here's what I did for a very wonderfully flavoured soup stock.

What you need:

stalks from one fennel bulb --rough chopped
1 small onion --chopped
1 tbsp dried basil
1 large sprig fresh rosemary
2 cloves of crushed garlic
6 to 8 dried curry leaves
2 dried bay leaves
1/2 inch grated ginger root
1 gallon water (H2O)
sea salt to taste --you'll only want a tiny bit


What you do:

Chuck everything except the sea salt into a large pot. Bring to a boil, cover and low boil/high simmer for an hour. You don't want to lose more than an inch of water in the pot, so keep it covered and adjust the heat accordingly.

Let it cool a bit and then strain out all the chunky stuff. Give it a taste and salt to your taste. Only use a bit of salt at a time cus you do not want too much salt in this stock or you'll ruin it.

Let it cool completely and refrigerate till use. Or use it that day. I wouldn't keep it longer than a few days before using it though. I used mine the next day to make a fennel, prawn, and prosciutto risotto. Obviously, the stock was the liquid that the rice and other stuff was cooked in. Look for that recipe next as it was delish.

You can also separate the stock into smaller containers and freeze them till you need some, no worries.

Creamy Potato and Pea Soup

And it is best served with a crusty, fresh, loaf of french bread for dunkers.

No pics of this as the batteries died when I turned the camera on (ooh baby, what big lenses you have!) and I didn't have time to charge another set --of batteries.

But trust me, it is delicious! If you'd like I can take a pic of an empty bowl and you can sorta imagine the soup in it... maybe not.

I shall now try to remember what went into the soup and the procedure I used...

What you need:

8 to 10 medium potatoes, peeled and diced
1 onion, chopped
2 cloves garlic, crushed
1 litre of water (4 cups)

1 cup cream
2 glasses chardonnay (and a 3rd one for the cook)
1 can garden peas (should only have 3 ingredients: peas, water, salt)
3 or 4 wild onion greens, minced (or garlic greens)
1 tsp dillweed

sea salt
white pepper

2 thai chili peppers, minced (optional)
1/2 small onion, finely minced (optional)
1 wild onion green, minced (optional)
1/2 tsp mint (optional)
1/4 tsp turmeric (optional)

What you do:

Take the first 4 ingredients and chuck em into a big ole dutch oven. Put the lid on it and simmer till the spuds are soft --around 45 mins. Remove from heat and remove the lid.

Take a spud masher and mash the heck out of the contents. You'll end up with a slurry-type liquid. Now add the next 5 ingredients and give a a good stirring to thoroughly combine everything.

Put the lid on and bring it back up to a simmer. Give it a taste test and season with sea salt and white pepper till it suits your palette.

Serve it up with a crusty bread for dunking!

Optional stuff:

Add the mint at the same time you add the dill. Ditto for the turmeric. The onion greens and chili are for garnish; just sprinkle over the top of the soup. I also sautéed some minced onion in a bit of olive oil and a bit of salt, then deglazed the wok with a splash of chardonnay and cooked the liquid down (that whole procedure took all of about 2 minutes). Those onions were then sprinkled over the top of my soup, along with the chili and greens.

Be creative with this, just try not to overpower the subtle taste and creamy texture of the soup with too many additions.

Leek & Beef Soup

Otherwise known as Mock Oxtail Soup. Oh heck! Let's just shorten it to Moxtail Soup!

This recipe is kind of a cross betwixt a traditional UK oxtail soup, a Scottish Cock-A-Leekie soup, and a Sri Lankan mulligatawny soup.

Given all that, it is SSSSOOOOOOOOOOOO GOOD!

And you don't knead an oxtail either. But you do need a leek. And some ground (minced) meat. I used beef this time but I've also made it with ground kangaroo, ground moose, ground lamb, and ground caribou.

It's very easy, few ingredients, but it does take some time for the flavours to develop. There are also many additions to this, I'll mention a few at the end of the post, no worries.

What you need:
500 grams beef mince (ground beef)
1 fresh leek
water (H2O)
1 can of roma tomatoes (diced, whole, whatever; as long as the ingredients are: Tomatoes, water, salt)
2 or 3 glasses of red wine --I usually use shiraz for this
1 to 4 tbsp vindaloo paste (not vindaloo sauce, but the REAL stuff)
sea salt
ground white pepper

What you do:
Slice the leek into 1 cm disks. Put the disks into a colander and rinse them well. If you've never used a leek before then you may like to know that dirt can hide in the darnedest nooks and crannies of the leek --so rinse the disks well.

Lightly cook the meat in the pot you intend to make the soup. As soon as the meat is JUST barely cooked through then remove the meat from the pot so as to leave all the wonderful juices behind. Set the meat aside.

Add the leek disks to the meat juices along with 1 litre of water. Simmer till the liquid is reduced by half. Add a half litre of water (or so) plus 2 or 3 glasses of red wine. Simmer for a few mins to bring it back up to temp.

Toss in the can of tomatoes --oh, make sure you OPEN the can first and only add the CONTENTS of the can. This is a good time to add the cooked meat too. A sprinkle of sea salt and a few grinds of fresh black pepper should be added now.

Give it a taste. Rather bland, eh? Now add the vindaloo paste a tbsp (or tsp if you are a wuss) at a time. Stir well after each addition and give a taste test. Once you've got the spiciness up to where you want it then (obviously) stop adding the vindaloo paste.

Turn the heat off. Cover and let stand for the afternoon. Crank the heat up before serving so it's close to piping hot. A good hunk of crusty, homemade, buttered, bread goes great with this.

What else can be done with this soup? Well, pretty much any red, ground meat can be used, game or not. Yes, that includes emu and ostrich. Use the ground (minced) meat as you would the minced (ground) beef.

Celery and/or cabbage make nice flavour additions. For the cabbage, shred it as thinly as possible and add it at the same time as the leek. I'd add the celery (very thinly sliced) a little bit through the simmering though. Carrots are a nice addition too. The softness of the carrots depends upon when you add them to the simmering leeks, your call.

For a slightly different flavour you can sear the leek (and whatever veggies you are using) in the pot first with some butter or olive oil along with a sprinkle of sea salt. Deglaze with the meat juices and a bit of red wine and then continue on with the recipe.

Anyways, loads of variations and loads of flavours can be yours just from this one simple soup.

Prawn-Flavoured Miso and Seaweed Soup

Ever done any cooking with prawns (shrimp)? Ever had to shell them? Did you ever wonder what you could do with the "heads" and the rest of the shells besides chucking them in the bin? Well, you are about to find out what you can do with them.

This easy and tasty soup makes a great side dish to whatever you are doing with the shrimp (prawn) meat for the main course.


Here's what you need:

Prawn (shrimp) shells and heads from about 1 pound of shrimp (prawn)
1 or 2 tbsp light miso paste
1 or 2 sheets of yaki-nori seaweed (the kind you make sushi rolls with)
8 to 10 cups of water
a large saucepan
a heat source

There's some optional stuff, like shitake shrooms, chillis, or some of the prawn meat, but the above will give you a very nice, refreshing soup. Oh, the light miso paste refers to the color and has nothing to do with reducing calories.


What you do:

Dump the prawn shells and heads into your saucepan along with the water. Crank up the heat source, cover and simmer till the liquid is reduced by around half. This'll take anywhere between 30 mins (minutes) and an hour (3,600 seconds).

Remove from heat. Take a potato masher and mash the shells (while still in the broth) to extract every last bit of prawny goodness from them. Strain to get rid of the shells. Put the strained broth back in the saucepan and add the miso paste. Put it back on the heat to bring it up to a simmer.

A couple of minutes (a few hundred seconds) before serving, shred the seaweed sheets into the soup. Let it stand for a minute.

Serve it up!

Tasty, simple, healthy!

Makes about a litre. If you want more soup, then use more water initially.

If you are using dried shitakes, try reconstituting them in half water and half dry sherry --it'll take an hour or so depending on how dry they are (if they've been in your pantry for a few years it'll take a long soak). And add the reconstipated shitakes to the soup the same time as the miso.

Seafood Chowder

This may seem to be a fairly simple menu item, but no matter how you make your chowder and whatever you put into it (clams, prawns (shrimp), crab, fish chunks, mussels, etc) there are a couple of very important techniques to getting it right.

For those of you in the US who make your own New England Clam Chowder, you'll feel right at home with this.

There are also many many different ingredients you can use. I'm going to give you the recipe as I made it two nights ago, and then give you a bunch of different things you can use/substitute. That way no matter where in the world you are and no matter what local ingredients you can lay your hands on, you'll always be able to make Dingo Dave's Seafood Chowder!

Oh, I tend to make it slightly different each time, depending on what I have in the pantry and the freezer that day or what was fresh at the fish shop that morning. So there's no real hard and fast rule, except for a couple of techniques.

On with the show!

Dingo Dave's Seafood Chowder

What you need:
2 or 3 rashers of bacon cut into small pieces
bacon fat from the above bacon (this is IMPORTANT)
1 can (400 mls or about 14 oz) coconut cream
200 gms small whole prawns (1/2 pound small shrimp) with the shells on
1 litre seafood stock (made from the above prawn shells)
1 whitefish fillet cut into small chunks (I used hoki)
small can of crab meat (or fresh if you've got it)
1/2 to 1 litre milk (2 to 4 cups)
a small minced (or diced) onion
2 cloves crushed garlic
2 tsp minced ginger
2 tbsp olive oil
1 tsp sesame oil
3 or 4 small diced potatoes
sea salt
ground black pepper
ground white pepper
1 tbsp dried basil
1/4 cup flour
a couple of litres of H-TWO-OH(water)

What you due:

Firstly, make the seafood stock (start this a few hours before you want to make the chowder). To make it you'll need to peel and devein the prawns. Toss the veins (alimentary tract, ahem...) but keep the heads, shells, legs etc and throw them in a big ole saucepan. Add a litre (4 cups) of water and boil the heck out of it. Once it's almost boiled down, add another litre of water and boil for a short time. Let cool. Take a potato masher and mash down the shells --this is to extract every bit of flavourful prawny goodness from the shells. Strain the stock (this is IMPORTANT). Save the stock, dump the shells.

Ok, your seafood stock is made, no worries.

Now for the nuts and bolts.

Cook the bacon pieces in the pot you plan to make the chowder in (use a low flame). Once the bacon is done to your liking (crispy or not, your call), remove the bacon but LEAVE THE BACON FAT IN THE POT. Add the diced potatoes to the pot, and cook in the bacon fat for a few mins; stir regularly. After a couple of mins, add the minced onion, some salt, some ground black (or white) pepper and a bit of dried basil. Stir it around. You should have some very nice aromas by now; just keep the heat low so nothing burns. Add the flour and mix well.

Yes, you'll have some browned on gunky looking stuff in the pot along with the spuds and onions. Don't worry, you're about to take care of that.

Now add the seafood stock you made earlier in the day. Give everything a good stir and use your wooden spoon to scrap the bottom and sides of the pot. Ain't deglazing pots great? Very flavourful. Oh, and, ummmmm, it's a FRENCH cooking technique!

Now add the coconut cream and about 1/2 litre of milk (2 cups). Let it simmer for a few mins.

While that's simmering, you get to sear the spices and seafood.

I use a wok, but feel free to use a saucepan if you'd like.

To the wok add the olive oil, sesame oil, garlic, ginger, fish chunks, crab meat, prawn (shrimp) meat. Crank the heat to HIGH and sear that stuff while tossing/stirring regularly. It'll only take 2 to 3 mins.

Dump the entire contents of the wok into the chowder pot. Also add the bacon pieces. This is the point where you can add more milk if you think the chowder is too thick. I, however, feel that chowder can never be too thick --but that's just me.

Let it simmer for a couple of mins, then serve it up! Have a fresh made loaf of bread or a fresh cobb or a fresh baguette around for dunkers.

This is seriously good!

And now for the substitutions and garnishes!

Well, most of you may not want to make your own fish stock. I can respect that, really! So get a bottle of clam juice instead. Oi! Can't find clam juice, use white wine! Don't drink? Don't worry, the alcohol will cook off.

Fake crab can be subbed for crab meat, no worries.

If you sub clams for the prawns, then DON'T sear them and only add them to the chowder in the last couple of minutes --otherwise they'll be really tough and chewy.

Don't like coconut (heathen scum)? No worries, just use milk cream instead.

Allergic to lactose? Well... this really isn't the recipe for you, sorry.

Garnish with any herbs you want, just make sure they are fresh; chives, basil, parsley, coriander (cilantro if you are in N.A.) etc.

Want it spicy? Add a tbsp or two of vindaloo paste to the wok when you sear the seafood and spices. Oh YEAH! That'll get them capillaries dilated!

Beef Soup

Sometimes even the simplest recipes can be the best. This is one of those times. You may not realise this, but I tend to cook without recipes. Now, I do have a very good idea of where I'm going with a dish, what food/herb/spices goes well with whatever, what technique works with what type of meat or veggie or fruit, etc. Around 75% of the time, it's turns out great and everyone enjoys it. Perhaps 20% it's a so-so, but plates and bowls are still empty. The remaining 5% is split between, "let's not have that again", and "HOLY SHIT! This is the best darned thing I've ever tasted! Whatever you did write it down so you don't forget cus we all want to have this every meal for the next century!!!"

This soup dish fell into the final category. *pat, pat, patting myself on back*

It involved a bit of leftover too. I'm very good with leftovers. If I was on Iron Chef and Chairman Kaga announced the theme ingredient of Leftovers, then I'd blow them all away! I'd even take them all on at once! Ha! It's gotten to the point where I actually plan for leftovers and have sorta figured out what I'll do with them for lunch the next day. Like this morning, for example. Had some leftover mashed spuds and some leftover sugared carrots. Hmmmmmm, add some bread crumbs, an egg, some seasonings, mix it all together and form into patties. Fry in leftover bacon fat. TaDa: great potato cakes!

Meat is also hard for me cus I've got to make it so my MIL can eat it (and like it too). Hmmmm, 80 yrs old, suffering from Crohn's Disease for the last 60 years (had 5 operations in her twenties and don't have much guts left), not many molars left, and her medications makes her taste buds have wild moods swings. For instance; she's loved lamb her whole life, then about a year ago she said she can't stand the taste of it no matter what is done. Sigh... Beef is even harder cus she loves the taste, but it has to be cooked very carefully for her so that's it's very tender. Needless to say, grilled steaks are out for her (but not for me!). Fish is no problem for her, but shellfish has to be cooked certain ways for her. Even chicken has to be cooked carefully for her... But at least I've gotten them to like spices! Keep in mind, these people used to have seizures if more than one small grind of pepper was put into 2 gallons of soup.

Now, since this post is titled Beef Soup, can you guess which type of land-based protein critter is to be used????? Yup, it's BEEF. All of our really tender good beef is very very very very expensive, so we buy cheap cuts and then I get creative.

To get the beef tender enough for her and for the onions to really "cook in" I knew I'd need to start this soup about lunchtime. Fortunately, it's like maybe 5 mins of work every couple of hours.

Here's what you need:

4 small, tough, cheap, possibly inedible, beef rump steaks
1 leftover baked potato
1 medium onion (rough chopped)
2 fresh carrots (diced)
lots of water
3 bay leaves
2 tbsp dried basil
2 tbsp dried oregano
lots of salt
1 to 2 tsp ground black pepper
bacon fat
2 potatoes (peeled and diced)
1/4 cup unbleached flour
one really big pot with a lid
a wok
wooden spoon for stirring
some sort of heat producing device, I recommend the side burner of your gas grill
fresh baked cobb for dunkers
bowls
spoons
serviettes (napkins to you US'ns)
table
chairs

Well, those last ten you can probably figure out on your own, I guess.

What you do:

Cube the beef. Try to trim off as much of the grisle and fat as you can. The cubes should be the size of small dice. Heat half (about 2 tbsp) the bacon fat in your big soup pot, and add the cubed beef in just BEFORE the bacon fat starts to smoke. Fry it up for a minute or two, turning frequently so all sides of the cubes are well browned. Yes, you'll have some stuff start to stick to your soup pot but don't worry.

Now add a couple of cups of water. Stir well while using your wooden spoon to scrap all the really good tasting bits off the bottom of the pot. Once that is done, fill the pot to 3/4 full and turn the heat down waaaaaaay low. Add the rough chopped onions, the bay leaves, basil, oregano, pepper, some salt (you can always add more later). 

Put the lid on it and go away for an hour. This may be a good time to take a nap :)

After an hour, top up the water level to 3/4 and give the broth a taste. Add more salt if needed and whatever other seasoning you think may help. Add the diced carrot it.

Put the lid on it and go away for another hour. Hmmmm, time for another nap perhaps?

Oh yeah: if you didn't make a fresh cobb pull-apart loaf of bread this morning, then you really should have started that BEFORE you took your FIRST nap.

After the next hour, skin the leftover roast spud and chop it up finely. Add to the soup, and top the water back up to 3/4 of the pot. Taste the broth, and adjust the seasonings. Dig out the 3 bay leaves and chuck em. Turn the heat off and let it sit for an hour COVERED.

After that third hour (and another nap???), heat the rest of the bacon fat (about 2 tbsp) in a wok and add the diced potato. Fry and toss for around two mins. Then sprinkle with the flour, stir it around, and add to the soup. Put the soup pot back on low heat for 30 mins.

Serve that sucker up in some LARGE bowls cus I can tell you everyone will want lots and lots. Fresh bread for dunkers!

Veggie Soup Stock

This is so tasty! It's something I've wanted to try for a while and was finally able to cus we got some fresh corn with ALL the husk on. Now I know many of you are going to say to make tamales with the husks, and others of you are going to say to grill them with the husks on (I love em that way) but no one else in the household down here will touch them that way. To them, the corn cob has to be boiled... for a long time... sigh; heathens they are!

So I always end up with a huge pile of corn husks and nothing to do with them (yes, I'll make tamales for myself and grill mine in the husk but there's still a lot left over).

So how's about making soup stock with them!? Why the heck not? Here we go with


Dave's Veggie Stock


What you need:

a big pile of fresh corn husks
lots of water
lots of sea salt
ground black pepper
dried onion flakes (I make my own)
dried red bell pepper (I make my own of them too)
dried basil


What you do:

Fill your largest stock pot with water, toss in all the corn husks. Sprinkle with sea salt, cover, and crank some heat under that sucker. Turn the heat way down once it's boiling, push down any floating corn husks (use something besides your bare hand), and then go away for an hour.

When you come back in an hour, top the water up, sprinkle in some more sea salt, add some ground black pepper, onion flakes, dried red bell pepper strips and some dried basil. Put the lid back on and go away for another hour.

Ok, you've now come back; it's been a total of two hours since you started the whole process. The stock in your stock pot should be tasting pretty darned tasty right about now. Now's the time to adjust the seasonings. Add more salt or pepper if you think it needs it (hey, they are your taste buds, not mine). If it's too salty you have two options. One is to add more water without adding more salt (I don't favor this as it dilutes the overall flavor of the stock), the other is to add a chunk or two of raw potato and simmer for another 15 to 20 mins. Take the chunks of potato out (they will be darned salty after having absorbed a lot of the salt in the stock) and do what you'd like with them (I usually chuck them in the freezer and use them to add to mashed spuds when I need to). And now your stock has been desalted without the rest of the flavor being diluted. Presto!

Well now, you should have about a gallon of good veggie stock. It should only have cost you 50 cents, maybe a dollar. You had the corn husks anyways cus of the corn cobs, a small handfull of onion flakes and a few strips of dried bell peppers are pretty cheap especially if you dry your own, and who doesn't keep salt, pepper and basil in their kitchen? Go run to a store RIGHT NOW and price how much a PINT of veggie stock is, and then look at all the crap that's been added to it! Are you back? Yeah, see: it's much better to make your own!

What to do with the stock? Well, you can use it as soup broth right now, no worries. You can toss it in the freezer for future use. Use it the next time you are making a risotto! Makes a great cream soup too! Use your imagination and your kitchen ingenuity and you'll be amazed.

Yeah, a gallon of veggie soup stock for 50 cents... pretty darned good the way food prices are, eh?
